Tomato and Carrot Soup



 Tasty, simple and easy to do. Goes well with slice of crusty toast. 



Ingredients (for 2) :
1 can of chopped tomato
3 carrots
1 onion
1 clove of garlic
0.5l vegetable stock
1 tbsp oil
salt, black pepper
bay leaf
oregano, basil
lemon juice
red balsamic vinegar

Peel carrots, onion and garlic, chop them roughly and put them into a pot with hot oil, leave them for 1/2 minutes, give them a good mix, we don't want to burn them! :-) then pour over 0,5l of vegetable stock, add the bay leaf and cook over low heat until softened vegetables, about 20 minutes. When carrot are already soft, you can add chopped tomatoes.

Leave on the gas for a while (another 10 min) and blend everything  to creamy texture.

Use pepper and salt to taste. Season with a large , men size pinch of oregano and basil. At the end squeeze the lemon (about 1tbsp) and drizzle with red balsamic vinegar.
